Cervejaria Dogma + Cerveja Oceânica | Tamed World

The newest release from Cervejaria Dogma, in collaboration with Cervejaria Oceânica from Rio de Janeiro, is Tamed World, a Brett Double IPA beer which was fermented with Brettanomyces Bruxelensis. The result is a 8.1% ABV beer and bitterness in the right measure. (Source: Loosely translated from what's on the brewery's social network.)

  • Beer: Tamed World
  • Style: Brett Double IPA (28A. Brett Beer - 22A. Double IPA fermented partially with brettanomyces)
  • ABV: 8.1%
  • IBU: N/A
  • Breweries:
  • Look: between yellow and golden color, transparent, with good formation of a white head that leaves marks on the glass.
  • Aroma: strong presence of fruity notes, bringing passion fruit and orange. There are also piney and herbal notes. Very light acidic notes. No malt presence.
  • Taste: at the same time fruity and bitter, as if a citric fruit juice was added to a Double IPA. Pineapple and orange notes are present. Medium-high bitterness, which is more perceived because of the lighter-than-usual body. Light acidity is present throughout the whole sip. Light alcohol notes are present as well. At the end of the sip, the aftertaste is earthy and herbal.
  • Mouthfeel: Medium body, medium-high carbonation and a dry and long finish.
  • Overall: A very good Brett Double IPA. Fruity and herbal, with a lighter body than usual Double IPAs.
