Devaneio do Velhaco | O Começo do Descontrole #2

The start of our wood barrel mixed-fermentation project. And when I say that's the start, I mean it: the primary fermentation is done 100% in the wood barrel. Refreshment balance, light acidity and aromas that are coming from our Brettanomyces. The version #2 of this beer went through a Port Wine barrel. The version #1 went through a turfed whisky barrel.   • Style: Sour Ale (28B. Mixed-Fermentation Sour Beer - 25B. Saison fermented with Brettanomyces and Saccharomyces)
  • ABV: 6.2%

  • Look: yellow color, transparent, with a great, long-lasting white head formation;
  • Aroma: funky notes dominate its aroma, with a leather-like feel. Very low presence of perfumy notes.
  • Taste: its taste starts sweet, but in a split second low to medium sour notes appear and interrupt this sweetness, with a tart feel. Brettanomyces notes are also here, reminding of leather and barnyard as well. The end of the sip is dry, almost starting to be puckering;
  • Mouthfeel: Light body, dry and short finish, with high carbonation;
  • Overall: Beautiful, really well executed sour. It’s a pleasure to see that there are locals making beers this good.
